We set very high standards for our cuisine, and train our staff extensively before the season starts, to ensure that you will thoroughly enjoy every meal on your own holiday with us.
We also take our Health and Safety responsibilities extremely seriously, so all our chalet and Chalet Hotel staff during the pre-season training course are trained to the Chartered Institute of Environmental Health’s Level 2 in Food Safety. For six days of the week our staff prepare all your meals, as described below.

Breakfast
At Ski Total, we pride ourselves on giving you a great breakfast to start your day, with a choice of cereals, fresh fruit and juices, yoghurts, plentiful English tea and good filter coffee, bread freshly baked in our chalets each morning (plus croissants or ‘pains au chocolat’ in France), cold meats, cheeses and preserves, and boiled eggs.
This is normally presented buffet-style for you to help yourself. And to cap it all, we also cook a hot dish of the day for you six days per week, such as sausage and bacon or pancakes with fresh fruit, individually served.
On the chalet hosts’ day off, they will prepare a Continental style breakfast for you, which will be left for you to help yourselves, and that evening you have the chance to eat out in one of the local cafés or restaurants – our resort team will be happy to provide some suggestions. In our Chalet Hotels, a full buffet breakfast (including hot option) is also served on the staff’s day off.
Piste Picnics
Our Chalet Hotels can also prepare a packed lunch for you on request, at a small local charge. For skiers keen to keep their Euro-spending to an absolute minimum, this is the ideal way to keep your costs down!
Afternoon Tea
The traditional 'welcome home' after a day on the slopes will be laid out for you in your chalet or Chalet Hotel, ready for your return, every day except on the staff's one day off per week. A good cup of tea or coffee is the perfect accompaniment to a delicious slice of freshly home-baked cake and keeps hungry skiers happy until dinner is ready. As an added benefit for guests in our Chalet Hotels, our chefs prepare a selection of cakes for afternoon tea.
Children's High Tea
In Chalets and Chalet Hotels with family guests, High Tea provides children under 13 years with a healthy menu, tailored more towards children's tastes and puréed food is available for infants on request. High Tea is at 5.30pm, and children do not join the main adult-only dinner.
Dinner in Chalets
A tasty and innovative, freshly cooked dinner will be prepared for you six nights per week by your Chalet Host - or by an experienced and professional chef in our larger chalets - and served with a choice of wines. Our four-course adult-only chalet dinners start with canapés and an apéritif, followed by an appetiser, main course and dessert, and completed by coffee with chocolates to round off your evening.
Your choice of complimentary quality wines is unlimited during the meal service, and freshly chilled water is also of course always available.
Culinary Choice Dinners in Chalet Hotels
A special feature of our Chalet Hotels is a more extensive culinary experience for our guests. With the greater kitchen facilities of a hotel, our chefs are able to offer choices of menu at dinner, generally including lighter as well as more hearty options, and always a vegetarian choice for each course. Guests will be asked to choose their evening meals at breakfast for that evening from a varied daily selection.
Our Chalet Hotel adult-only dinners offer 5 courses, starting with canapés and an apéritif, followed by an appetiser, main course and dessert, and a cheese selection to round off your meal in style. All this is then followed by coffee with chocolates to complete your evening's repast! Your choice of complimentary quality wines is unlimited during the meal service and freshly chilled water is also of course always available.
Vegetarian and Special Diets
Vegetarian options are always on our 'Culinary Choice' menu in our Chalet Hotels, and are available in our chalets if you advise us in advance. Other special diets can generally be catered for at a cost of £35 per person per week. Any dietary requirements must be advised to us at the time of booking in order for us to be fully prepared and see paragraph 15(c) of the booking conditions for important details.
Chalet Bars
Most chalets have a low-priced bar/fridge, selling cold beers and mixers, with plenty of ice and lemon on hand if you have brought your own gin!
Our Quality Wines
We are very proud of our wine selection for Ski Total chalets and Chalet Hotels, which combines crisp and fruity whites with medium to full bodied reds and, new for this year for our Chalet Hotels, a Rosé - see below for some recent examples.
We are very proud of our wine selection for Ski Total chalets and Chalet Hotels, which combines crisp and fruity whites with medium to full bodied reds, for a variety of palates. In our Chalet Hotels we also offer an additional light fresh rosé to our guests’ choice.
We select our wines in conjunction with our good friends Nicolas and Véronique - the third generation in the Perret family’s fine wine business based in the Savoie. Nicolas is a qualified wine expert, having trained at the prestigious Burgundy Wine University in Beaune.
Each season in October, Nicolas & Véronique bring over a new selection for us to sample (someone has to do it!) and together we choose our wines for the coming season, based on our menus and their pure enjoyment factor.
Wine is an incredibly subjective and emotive subject, however the feedback we have received from our guests over recent seasons endorses our aims of providing wines to enhance your meal and to suit most tastes.

Your Choice of FREE Quality Wines with Dinner
Two Red, two White and a Rosé (Chalet Hotel only) wines for the 2010/11 season will be chosen in the autumn, and may include the following favourites from last winter:
- Chardonnay-Sauvignon - Vin de Pays des Cevennes This crisp white wine is well rounded, with good body resulting from its combination of Chardonnay and Sauvignon grapes,
- Costières de Nimes - AOC A combination of Grenache Blanc, Marsanne and Roussane grapes, with floral and fruit aromas - lovely with fish or white meats.
- Grenache-Cabernet - Vin de Pays des Cevennes Predominantly from Grenache vines, this colourful light-bodied red
has lovely fruity aromas, and a slightly tannic finish.
- Merlot - Vin de Pays d’Oc 100% from Merlot grapes, this smooth, easy drinking, ruby-red wine has full-bodied flavours of cherry and blackcurrant.
- Grenache-Cinsault - Vin de Pays des Cévennes A combination of Grenache and Cinsault grapes this wine is rosepetal in colour with a crisp fruitiness that is well- balanced and smooth. (Only available in our Chalet Hotels.)
